What foods will boost my red blood cell count?

Q: I have a low red blood cell count. I am not allowed to eat liver (cholesterol problem), and do not like spinach. What other foods are good for building up red blood cells?

A: Here are some possibilities:

  • Egg yolks
  • Dried beans
  • Dried fruit
  • Salmon
  • Tuna
  • Lean beef
  • Chicken and turkey

With your cholesterol situation, you may want to skip the egg yolks, as they are high in cholesterol. And if you are diabetic, then remove dried fruit from the list.
